My family can be picky about pumpkin, so I adapted a tried-and-true recipe to make these kid-friendly, lightly spiced cookies that are great plain or dressed up for Halloween.

I wanted a recipe that would turn leftover pumpkin into an easy, appealing snack. These cookies were adapted from a classic spiced pumpkin biscuit recipe and decorated to fit a spooky Halloween theme. How to make the spider decoration

I decorated these cookies with melted chocolate from small button-style packets. Warm a bowl of water and place sealed packets of chocolate buttons in the hot water for about a minute. Remove, dry and gently squeeze the packet to check the chocolate has melted. If it’s still firm, return the packet to the hot water briefly.

Snip a tiny corner off the packet and pipe thin lines of melted chocolate in a circular pattern on the cookie to form a web. Add an unmelted chocolate button in the center as the spider’s body, then pipe a few short lines of chocolate for legs. Using contrasting colours — white for web lines and milk for spider bodies, or vice versa — creates a clear, festive look.

How I adapted the recipe

I reduced the sugar from the original recipe and used mixed spice as a convenient all-in-one flavouring instead of measuring out individual spices. The reduction in sugar keeps the cookies balanced while the pumpkin and spices give them warm autumn notes. If you prefer sweeter cookies, add a little icing or use the full sugar amount from other recipes.

Texture and flavour

These cookies bake up moist and light with a cakey consistency rather than a dense, chewy cookie. If you like cake-like soft cookies, you’ll enjoy them — they’re tender and tenderly spiced, with pumpkin adding moisture and subtle sweetness.

What is pumpkin puree?

Ingredients

  • 300 g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 3 teaspoons mixed spice (or use pumpkin spice)
  • 150 g caster sugar
  • 125 g butter
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 250 g pumpkin puree

To decorate (optional)

  • 60 g white chocolate buttons (two 30 g packets)
  • 60 g milk chocolate buttons (two 30 g packets)

Instructions

  1. Preheat oven to 160°C (fan). Line four baking trays with baking paper.
  2. Combine flour, baking powder, bicarbonate of soda and mixed spice in a bowl.
  3. Cream butter and sugar in a large bowl, then add the egg, vanilla and pumpkin puree and beat together.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Use a tablespoon to place spoonfuls of batter onto the trays, leaving space between each cookie as they will spread.
  6. Bake for 15 minutes, then transfer to a wire rack to cool.
  7. For decoration: place sealed packets of chocolate buttons in a bowl of hot water for about a minute. Remove, dry and squeeze to check they are melted. Snip a tiny corner and pipe chocolate onto cookies to form a web, then add an unmelted button as the spider body and pipe legs.
