Some recipes are so simple you wonder if they even count as a recipe—yet they’re so good you have to share them. That’s exactly how I feel about this Avocado Tomato Sandwich with Baby Spinach. It brings together some of my favorite ingredients: creamy avocado, ripe tomato and fresh baby spinach. The result is a flavorful, veggie-packed sandwich that’s satisfying and quick to make.

I make this sandwich for lunch on days when I don’t want to cook, and lately I’ve been making it even more often. My kitchen is mostly packed since I’m moving this weekend, so easy meals like sandwiches and pasta are my go-to. I’m excited to settle into the new house and start cooking full meals again—but I’ll definitely miss this little apartment where I began food blogging and learned so much. A sunny kitchen will be a welcome bonus for photographing food!

Avocado Tomato Spinach Sandwich

This sandwich takes about 10–15 minutes to assemble. Use any bread you prefer; I like whole wheat for its nuttier flavor. I’ve added a touch of chaat masala to this version—a tangy Indian spice blend that pairs beautifully with avocado—but it’s optional. If you can’t find chaat masala, the sandwich will still be delicious without it.

Method

Toast two slices of bread, if desired. Spread mayonnaise on one slice and season with a little salt and pepper.

Peel the avocado and remove the pit. Mash half the avocado with a fork and stir in chopped cilantro, salt and pepper to taste. A squeeze of lemon juice can be added to brighten the flavor. Spread this avocado mixture on the second slice of bread.

Slice the remaining half of the avocado and set the slices aside.

Layer tomato slices over the avocado spread. Add a handful of baby spinach leaves, then arrange the avocado slices on top. Sprinkle a pinch of chaat masala if using.

Tips:

  • Toasting the bread is optional—grill it for extra texture and flavor.

Ingredients

  • 2 whole wheat bread or any bread of your choice
  • 1 avocado, divided
  • 1 tablespoon cilantro, chopped
  • 1 tomato, cut into rounds
  • handful of baby spinach, around 15 leaves
  • 2 teaspoon mayonnaise
  • teaspoon chaat masala
  • salt, to taste
  • pepper, to taste

Instructions

  • Take 2 bread slices of your choice and toast them.
  • Apply mayonnaise on one of the slices and then sprinkle some salt and pepper on top.
  • Peel the avocado and remove the pulp. Mash half of it with a fork, add chopped cilantro, salt and pepper to taste, and mix. Optionally add a little lemon juice.
  • Spread the avocado mixture on the second slice of bread.
