Making a Beef Enchilada Casserole

  4. Lay three tortillas in the bottom of the dish (cut one if needed to fit). Spread 1/3 of the meat mixture over the tortillas, then 1/3 of the corn, and 1 cup of cheese.
  5. Repeat for the second layer: three tortillas, 1/3 meat, 1/3 corn, and 1 cup cheese.
  6. Top with the final three tortillas, the remaining meat and corn, and the remaining 1 1/2 cups of cheese.
  7. Bake uncovered for 30 minutes, until the cheese is melted and bubbly. Allow to rest briefly, then serve.
