How to make them

Start with a sturdy, well-heated pan: cast iron or stainless steel works best for a strong sear. Heat a tablespoon of neutral oil over medium-high heat until shimmering.

Season bite-sized pieces of steak with salt, pepper, and paprika, then add them to the hot pan. Let them brown without crowding the pan, turning them to ensure every side develops color. This takes a minute or two per side—patience pays off for better caramelization and flavor.

Once the steak is cooked and nicely browned, remove any excess oil from the pan. Return the steak to the heat and add butter, minced garlic, parsley, and cilantro. Lower the heat to medium-low and toss everything together until the butter melts and the garlic becomes fragrant and begins to color. Remove from the heat and serve immediately.

If fresh herbs or garlic aren’t available, frozen parsley and cilantro work well, and pre-minced garlic is an acceptable substitute—this recipe is forgiving and adaptable.
