Grilled Chicken Breast with Homemade Barbecue Marinade

It’s almost the Fourth of July, and I’m excited for time off, hiking and relaxing. Along with this barbecued chicken and a refreshing cucumber salad, I might add a crispy lechon kawali for a festive spread. But let’s focus on this barbecued chicken breast.

This preparation is straightforward and tasty. It’s ideal for Labor Day potlucks, end-of-summer parties, or a Boy Scout event — I’m bringing it to my son’s party this Sunday and expect it to be a hit.

Chicken breast works well here because it soaks up the marinade, then releases a balanced combination of tang and sweetness when grilled. The smoky aroma from the grill elevates the flavors even more. You can double or triple the recipe to serve many people. Leftovers keep well and make a great packed lunch the next day without losing flavor.

Chicken Breast Barbecue and Homemade Chicken Marinade

Ingredients

  

  • 1/2 inch ginger root chopped
  • 3 garlic cloves chopped
  • 2 tsp soy sauce
  • 1 tsp Worcestershire sauce
  • 2 tsp olive oil
  • 1/8 cup ketchup
  • 1 1/2 lb chicken breast cut into bite-size pieces
  • 1 red bell pepper chopped into bite-size pieces
  • 1 yellow bell pepper chopped into bite-size pieces

Instructions

 

  • Cut chicken breast into cubes or small bite-size pieces. Place in a bowl and add chopped ginger, garlic, soy sauce, olive oil, Worcestershire sauce and ketchup. Mix well so the chicken is evenly coated. Cover and marinate in the refrigerator for at least 4 hours or overnight for best flavor.
  • When ready to cook, thread the chicken onto metal skewers, alternating with pieces of red and yellow bell pepper. Grill over medium heat or broil in a preheated oven for 12 to 15 minutes, turning frequently, until the chicken is cooked through.
  • Remove from the grill, let rest briefly, then serve and enjoy.
