Ingredients
- 1 egg
- 1 tbsp almond flour
- 1/2 cup shredded cheddar cheese (plus more for the griddle)
- 1 tbsp softened cream cheese
- 1/2 tbsp freshly diced jalapeno
- 2 tbsp crumbled bacon
- pinch garlic powder
Instructions

Preheat your mini waffle maker.

Whisk the egg in a small bowl, then add the almond flour, shredded cheddar, softened cream cheese, diced jalapeño, crumbled bacon and a pinch of garlic powder. Mix until combined.

Sprinkle a little shredded cheddar directly onto the griddle for extra crisp edges.

Pour half the batter onto the griddle, then top with a bit more cheddar.

Close the lid and cook 3–5 minutes, or until the chaffle is golden and firm. Repeat with the remaining batter.

Notes
Tips: For milder heat, remove jalapeño seeds. To make chaffles extra crispy, add cheese to the griddle and allow edges to brown a bit before removing. These are great as a snack, a quick breakfast, or used as sandwich “bread.”
