Ingredients

  • 1 egg
  • 1 tbsp almond flour
  • 1/2 cup shredded cheddar cheese (plus more for the griddle)
  • 1 tbsp softened cream cheese
  • 1/2 tbsp freshly diced jalapeno
  • 2 tbsp crumbled bacon
  • pinch garlic powder

Instructions

  • Preheat your mini waffle maker.
  • Whisk the egg in a small bowl, then add the almond flour, shredded cheddar, softened cream cheese, diced jalapeño, crumbled bacon and a pinch of garlic powder. Mix until combined.
  • Sprinkle a little shredded cheddar directly onto the griddle for extra crisp edges.
  • Pour half the batter onto the griddle, then top with a bit more cheddar.
  • Close the lid and cook 3–5 minutes, or until the chaffle is golden and firm. Repeat with the remaining batter.
  • Serve plain or spread with extra cream cheese. Enjoy!
