Spicy Cajun Vegetarian Macaroni and Cheese Recipe

Keep in mind Cajun seasoning blends vary in salt and heat. I often make my own so I can control those levels. The 1 tablespoon called for here works well with many store mixes, but if your blend is particularly salty or spicy, reduce the amount to taste.

Sharp cheddar works wonderfully for this recipe, but use mild, medium, or extra-sharp according to your preference. For the creamiest sauce, grate cheese from a block right before using—pre-shredded cheese often contains anti-caking agents that can make sauces less smooth and slightly stringy.

Other Tested Ingredient Variations

I tested versions with sautéed onions and bell peppers—classic Cajun additions—but ultimately kept them out to preserve the silky texture of the sauce. The flavor difference wasn’t large enough to justify the extra step, though you can certainly add sautéed veggies for color and extra heartiness. If you do, sauté them in the butter until tender, then proceed with the recipe.

There’s no flour or roux in this recipe; it’s intentionally simple. The half-and-half plus grated cheese creates a quick, smooth sauce without thickening agents.

While the pasta cooks, melt the butter in a pan over low heat and whisk in the Cajun seasoning to bloom the flavors. Grate the cheese and add it to the seasoned butter along with the half and half, keeping the heat low. Whisk gently until the cheese melts and the sauce becomes smooth and creamy.

Drain the pasta, fold it into the sauce, and warm for another 1–3 minutes until it reaches your desired thickness. Remember the sauce will thicken as it cools, so avoid over-reducing it on the stove.

  • 8 ounces uncooked elbow macaroni or any other short pasta (8 oz = about 1¾ cup)
  • 4 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning (see notes)
  • 8 ounces mild, medium, or sharp cheddar cheese (8 oz = about 2 cups shredded)
  • ¾ cup half and half

Instructions

 

  • Bring about 8 cups of water to a boil in a large pot. Cook the pasta until al dente according to package directions, then drain.
  • Meanwhile, melt the butter in a pan over low heat. Whisk in the Cajun seasoning until fragrant.
  • Shred the cheese if needed. Add the cheese and half and half to the seasoned butter over low heat. Whisk occasionally until the cheese melts and the sauce is smooth and creamy.
  • Add the cooked pasta to the cheese sauce, stir to combine, and heat 1–3 minutes to thicken slightly. Serve hot—the sauce will set more as it cools.

  • Salt and heat vary between Cajun blends. Start with 1 tablespoon, then adjust if your blend is especially salty or spicy.
  • If you’re outside the U.S., half and half can be swapped for half cream or a 1:1 mix of single cream and whole milk.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat with a splash of half and half or milk—microwave covered for 1–2 minutes or warm in the oven covered at 350°F until heated through.
