Ingredients
Ingredients for Meatloaf:
- 1-1¼ pounds ground turkey
- ½ cup sweet pickle relish
- ⅓ cup spicy brown mustard or regular mustard
- 1 small onion, chopped
- 1 slice whole wheat or multi-grain bread made into crumbs, (about ½ cup crumbs), see instructions
- 1 egg white
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- Fresh ground pepper

- 2 tablespoons ketchup
- 1 tablespoon spicy brown mustard or regular mustard

Preheat the oven to 350°F (175°C). Line a baking pan or sheet with foil and set aside.

To make the breadcrumbs: Toast one slice of whole wheat or multi-grain bread, including the crust. Place the toasted slice in a blender or food processor and pulse until you have about ½ cup of fine crumbs.

In a large bowl, combine the ground turkey, pickle relish, mustard, chopped onion, bread crumbs, egg white, garlic powder, salt, and fresh ground pepper. Mix thoroughly so the ingredients are evenly distributed.

Form the mixture into a loaf about 12 by 4 inches and place it in the center of the prepared baking pan. Bake on the middle rack for 60 minutes, until cooked through.

When the loaf is done, remove it from the oven. In a small bowl, stir together the ketchup and mustard, then spread the mixture evenly over the top of the meatloaf. Let the loaf rest for at least 5 minutes before slicing into 12 slices and serving.
