Making a Beef Enchilada Casserole

While the beef cooks, preheat the oven to 350°F and grease a 13 x 9″ baking dish (or a similar 3-quart pan).

Once the meat is browned, drain any excess fat if needed, then stir in the enchilada sauce and salsa. Choose mild, medium, or hot enchilada sauce and salsa depending on how spicy you want the final dish.
Remove the skillet from the heat and set it aside while you prepare the layers in the baking dish.

Line the bottom of the dish with three 6″ corn tortillas. Depending on your dish shape, you may need to cut a tortilla in half to fill gaps. Spread about one-third of the meat mixture evenly over the tortillas, then top with one-third of the corn and one cup of shredded cheese.

Instructions

- Repeat for the second layer: three tortillas, 1/3 meat, 1/3 corn, and 1 cup cheese.
- Top with the final three tortillas, the remaining meat and corn, and the remaining 1 1/2 cups of cheese.
- Bake uncovered for 30 minutes, until the cheese is melted and bubbly. Allow to rest briefly, then serve.
