My New Go-To Meatloaf Recipe: Classic, Moist, and Flavorful

This meatloaf from Joanna Gaines’ Magnolia Table Cookbook Vol. 1 was a delightful discovery for me. It quickly became a household favorite and will probably be my go-to meatloaf from now on—the family devoured every last bite.

If you’ve followed my Magnolia Table cookbook reviews, you know I appreciate recipes with short, straightforward ingredient lists. This meatloaf fits that preference perfectly. I prefer to avoid overly processed ingredients; in past recipes from the book I’ve sometimes substituted cream cheese for Velveeta in dishes where it made sense. Still, this meatloaf stays simple without sacrificing flavor.

Despite the brief ingredient list, the flavor is full and satisfying. The recipe is extremely easy and quick to assemble—I often have the mixture ready before the oven finishes preheating.

The reaction…

When I served this to my family, the response was enthusiastic. They asked me to make this meatloaf from now on, which is about the highest praise a home cook can get. The combination of seasonings, cheese, and texture made it an instant favorite.

I especially liked using saltine crackers as the binder and the addition of cheddar cheese. The crackers nearly melt into the mix as it cooks, adding seasoning and moisture without being noticeable. The cheddar hides in little pockets throughout the meatloaf, offering occasional bursts of rich, cheesy goodness.

The ketchup glaze on top is comforting and familiar—some people debate it, but I enjoy the sweet-tangy finish it provides. I often add a bit more ketchup just before serving; it feels homey and complete to me.

The TIPS…

To crush the crackers easily, open one end of the sleeve so air can escape and press down on the stack—this usually breaks them up well. Pour them into a bowl and press a bit more to reach the desired crumb texture.

When combining the ingredients, remove rings and bracelets and use your hands. As my aunt always says, hands are the best tool. Gently fold the mixture together—just enough to distribute the ingredients evenly but not so much that the meat becomes tough.

Overall, Joanna Gaines has crafted another reliable family recipe. This meatloaf feels like an heirloom dish that will be requested for years to come—perfect for cozy weeknight dinners or comforting Sunday meals.
