Rebujito: Refreshing Sherry Cocktail Recipe and Serving Tips

When people think of Spanish drinks, many say “Sangria.” We love sangria, but another classic is sherry. The Rebujito is a refreshing Spanish cocktail made with sherry. Once a popular festival drink in Andalusia, it’s now enjoyed around the world any time the weather calls for something light. Our simple low-carb version uses three ingredients. Like a spritzer, it’s easy-drinking—so you can enjoy more than one without feeling overwhelmed by alcohol.

History

If you visit Spain, try to attend a feria or local festival. I once saw the running of the bulls in Pamplona during the week-long Festival of San Fermín — a vivid memory. Spanish festivals often feature abundant toasting and celebration, and in Andalusia the fairs revolve around horses, costumes and sherry. The Jerez region near Seville produces most of the world’s sherry, so a chilled, thirst-quenching sherry-based drink made plenty of sense in hot weather. That’s how the Rebujito — a refreshing sherry cocktail — became a staple at celebrations.

Fairs like the Feria del Caballo in Jerez and the Feria de Abril in Seville showcase flamenco, horses, food and, of course, sherry. In hot weather the crowds needed a drink that refreshed and allowed multiple servings without heavy alcohol effects — enter the Rebujito: sherry mixed with a fizzy citrus mixer and a touch of mint.

Three Simple Ingredients

Traditional Rebujito is sherry and lemonade with a lemon garnish. Today mint is commonly added for a cool, refreshing note. To keep this version low carb, use diet lemon-lime soda instead of regular lemonade. You can let fresh mint steep in the sherry for a few hours for more flavor, or for a quick option add a drop of spearmint extract so the carb count stays negligible.

The ratio is simple: one part sherry, two parts diet lemon-lime soda, and a few mint sprigs. Stir and serve chilled.

We enjoyed our Rebujito alongside a Langostino Cobb Salad and it was superb. This cocktail pairs well with seafood, chicken, or a paella made with cauliflower rice. In warm climates it’s a perfect anytime refresher — light, low carb, and full of bright flavor.

Ingredients

  • 2 ounces Sherry

  • 4 ounces Lemon-lime soda (diet and cold)

  • 3 sprigs Mint (leaves) or spearmint extract

Instructions

  • Combine the sherry and diet lemon-lime soda in a glass or shaker.
  • Add a few mint leaves. Muddle them in the bottom, or use a drop of spearmint extract. Shake or stir with ice.
  • Garnish with mint leaves and serve cold.

Chef’s Notes

  • Traditional recipes often call for a lighter, nuttier sherry like Fino or Manzanilla. We used Amontillado and enjoyed the bolder flavor. Serve without ice if your mixer is well chilled to avoid dilution.
