Christmas is nearly here, and like any parent, I want the season to feel extra special for my children. I treasure memories of gathering with family over the years and sharing holiday meals featuring treats we only enjoyed at this time of year. This season I’m testing a few of my family’s recipes, adapting them to be both gluten-free and dairy-free. The first success is this Gluten Free Cranberry Orange Bread — a wonderfully bright, moist loaf that works equally well as a snack, breakfast, or dessert. Be warned: it’s so tasty one slice often turns into two. The sweet, citrusy orange pairs beautifully with the tart cranberries, making it a crowd-pleaser for adults and kids alike.
This recipe yields two loaves of cranberry orange bread and is both gluten-free and dairy-free.


Gluten Free Cranberry Orange Bread

coconut palm sugar or brown sugar -

many recipes say to slice, but they pop when they’re cooking so I don’t see the need -

Instructions

Preheat the oven to 350°F (175°C).

If your loaf pans aren’t nonstick, lightly grease two loaf pans with coconut oil to prevent sticking.

In a mixer or with an electric hand mixer, combine the eggs, sugar, coconut oil, orange zest, and orange juice until blended.

In a separate bowl, whisk together the gluten-free flour, baking powder, and baking soda.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth.

Fold in the cranberries with a spatula so they are evenly distributed throughout the batter.

Divide the batter between the two loaf pans and smooth the tops with a spatula.

Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.

Remove from the oven and let the loaves cool in the pans for 15 minutes.

Invert the pans onto a cooling rack to remove the loaves. If a loaf sticks, gently run a knife around the edges before flipping again.

Turn the loaves right-side-up on the rack and allow them to finish cooling completely before slicing.
