Turkey Cranberry Brie Hand Pies — Savory Holiday Pocket Sandwiches

These turkey, cranberry and brie parcels are an easy, tasty way to transform those leftovers into a fresh, satisfying meal. They keep the familiar holiday flavors — cranberry and sage — and get an indulgent boost from creamy brie.

Even if you didn’t cook a whole bird or it’s not Thanksgiving, these pockets are quick to assemble and deliver a big flavor payoff. They work wonderfully as an appetizer, lunch, snack or simple weeknight dinner.

Turkey, cranberry & brie pockets

Ingredients

2 cups shredded cooked turkey

4 tablespoons butter

1/2 cup flour

2 teaspoons sage powder

1 teaspoon garlic powder

2 teaspoons salt

1 cup milk (add extra if needed)

1 medium onion, chopped

1/2 cup cranberry sauce

8 small squares of brie

1 egg, beaten (for egg wash)

2 sheets puff pastry (enough for four 5″ squares per sheet)


Instructions

  1. Heat a little olive oil in a pan and cook the chopped onion until translucent and soft.
  2. In a separate saucepan, melt the butter. When bubbling, stir in the flour and cook for 2–3 minutes to eliminate the raw flour taste.
  3. Whisk in the milk gradually, adding a little at a time until you reach a smooth, gravy-like consistency. Add more milk if the mixture seems too thick.
  4. Season with salt, sage and garlic powder. Stir in the cooked onions and shredded turkey, then remove the pan from the heat. Let the filling cool slightly before assembling.
  5. Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper and cut puff pastry into 5-inch squares.
  6. Spoon a portion of the turkey mixture into the center of each pastry square. Add a small spoonful of cranberry sauce, then top with a piece of brie.
  7. Bring the corners of the pastry together, pinch tightly to seal, and crimp the seams to ensure the parcels are closed.
  8. Brush each parcel with beaten egg and bake for 20–30 minutes, or until the pastry is puffed and golden brown. Allow to cool slightly before serving.
