We’re not huge fans of very hot food, so this recipe keeps heat moderate so you can still taste all the ingredients. If you enjoy a spicier kick, add one or two finely chopped chilies or a dash of Sriracha or Tabasco to suit your preference.
When someone in the family loves bold heat, I’ll crank it up for them — it’s easy to customize a portion without changing the whole dish.
This recipe scales well — double or triple it for larger families. Use a large wok or an electric skillet if you need extra capacity. It’s also nice to serve straight from the skillet set on a trivet at the table; it looks inviting and encourages everyone to help themselves.
I like to keep a bowl of extra corn chips on the side so everyone can add a little more crunch to their plate as they wish. If you prefer nacho-style chips instead of plain corn chips, feel free to substitute.

Ingredients
- 1 TB Vegetable Oil
- 450 g Lean Ground Beef (1 pound)
- 1 ¼ cups Frozen Corn defrosted
- 1 can (410g) Mexican-Style Tomatoes
- 1 can (410g) Tomato Puree
- 1 TB Sugar
- 1 sachet Taco Seasoning
- 1 cup Cheddar Cheese grated
- 2 cups Corn Chips
- Cilantro to garnish (optional)
Instructions

Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook until browned; drain excess fat if needed.

Stir in the defrosted corn, Mexican-style tomatoes, tomato puree, sugar, and taco seasoning. Mix well, reduce the heat and simmer uncovered for about 20 minutes, stirring occasionally. Remove from heat.

Sprinkle or stir in the grated cheddar. Arrange corn chips around the edge of the skillet for serving. Garnish with cilantro if desired and serve immediately.
