I resisted microwave mug cakes for ages, assuming they’d be tough, bland and rubbery. Meanwhile I kept developing quick desserts like a peach and almond cake or no-bake Snickers bites. I was wrong — mug cakes can be light and fluffy if you don’t overcook them. They rise in the microwave almost like a miniature soufflé.

Pop a few Rolos into the center and add a scoop of ice cream and you have dessert in minutes. I mixed this in a jug because I’m messy, then poured it into a mug — but you can mix straight in the mug if you prefer. A chocolate dessert that only needs a mug, a spoon and a fork to wash sounds pretty ideal.

Pro Tip: To make this gluten free, substitute plain/all-purpose flour with your preferred gluten free plain flour — it works well.

Chocolate Caramel Mug Cake – The Perfect Dessert For One
Ingredients
- 2 tbsp unsalted butter
- 2 tbsp chocolate chips (check for gluten free if needed)
- 3 tbsp plain/all-purpose flour (or use gluten free plain flour)
- 2 tbsp cocoa powder
- ¼ tsp baking powder
- 3 tbsp light brown sugar
- 2 tbsp milk
- ¼ tsp vanilla extract
- Pinch of salt
- 1 small egg, lightly whisked
- 4 Rolos or other chocolate-covered caramels (check for gluten free)
To serve:
- Extra chocolate chips and a dusting of confectioners’ sugar

Place the butter and chocolate chips in a microwave-safe jug and melt for about 30–60 seconds, until combined.

Add the flour, cocoa powder, baking powder, sugar, milk, vanilla, a pinch of salt and the whisked egg. Whisk until smooth.

Pour the batter into a mug and press four Rolos into the center.

Microwave for 90–110 seconds, until the cake has risen over the rim and is set on top. Cooking times vary by microwave, so check at the lower time first.

Carefully remove (it will be hot). Top with extra chocolate chips and a sprinkle of confectioners’ sugar before serving.
