Boneless chicken thighs coated in a sweet Asian-inspired sauce, served over pineapple rice in this Sweet Asian Chicken with Pineapple Rice.

I started this post several times today and erased it each time. Writing can be fun when there’s a story to share, but sometimes you just want to get straight to the point: here’s a great recipe—make it. No frills, just delicious food.
This recipe caught my eye because of one unexpected ingredient: frozen lemonade concentrate. It sounds unusual, but it gives the sauce a bright, sweet-tangy flavor that pairs beautifully with soy and brown sugar. The recipe uses only eight ingredients for both the chicken and rice, and you can have it on the table in under 30 minutes once the rice is cooked. It’s quick, family-friendly, and perfect when you want a flavorful weeknight meal without fuss.
If you’re looking for a simple chicken dish with an Asian flair that’s easy to prepare and crowd-pleasing, this Sweet Asian Chicken with Pineapple Rice is worth trying.

Sweet Asian Chicken with Pineapple Rice
Ingredients
- 6 tablespoons frozen lemonade concentrate thawed
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 4 boneless skinless chicken thighs
- 1 cup white rice cooked
- 1 cup diced canned pineapple
- 3 tablespoons butter
- 2 tablespoons diced chives
Instructions
-
Combine the thawed lemonade concentrate, soy sauce, and brown sugar in a skillet and whisk until smooth. Add the chicken thighs, cover the pan, and cook over medium heat for 8 minutes.
-
Uncover, turn the chicken, and continue cooking, basting occasionally, until the sauce thickens and the chicken is cooked through, about 7 more minutes.
-
In a separate large skillet, combine the cooked rice, diced pineapple, butter, and chives. Heat over medium-high until warmed through, 3–5 minutes. Season with salt and pepper to taste.
-
Serve the chicken over the pineapple rice and spoon extra sauce from the pan over each portion.
