Ingredients

  • 6 tablespoons frozen lemonade concentrate thawed
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 4 boneless skinless chicken thighs
  • 1 cup white rice cooked
  • 1 cup diced canned pineapple
  • 3 tablespoons butter
  • 2 tablespoons diced chives

Instructions

  • Combine the thawed lemonade concentrate, soy sauce, and brown sugar in a skillet and whisk until smooth. Add the chicken thighs, cover the pan, and cook over medium heat for 8 minutes.
  • Uncover, turn the chicken, and continue cooking, basting occasionally, until the sauce thickens and the chicken is cooked through, about 7 more minutes.
  • In a separate large skillet, combine the cooked rice, diced pineapple, butter, and chives. Heat over medium-high until warmed through, 3–5 minutes. Season with salt and pepper to taste.
  • Serve the chicken over the pineapple rice and spoon extra sauce from the pan over each portion.
