I’m sitting in my favorite coffee shop—my “office” to some friends—preparing our next blog post. Despite the energizing aroma of freshly ground coffee, inspiration isn’t flowing. It’s not writer’s block exactly; for me it’s impatience. I’m waiting for my friend Callie so we can finally have some overdue girl time. Nothing fancy, just coffee and conversation, but I can hardly wait.
Callie and I met a few years ago at work. Neither of us is from here; we’re both living away from family and home. That shared experience has brought us close. We often talk about how hard it is to be away from the people who raised us—especially our moms. Even when a parent lives only a few hours away, it still feels different when they’re not here. Having a friend who understands that feeling is something I’m very grateful for.

Description
This asparagus and scallion scramble is a versatile, fresh dish suitable for Mother’s Day or any meal—breakfast, lunch, or dinner. Serve it with toast and smoked salmon for a simple, elegant plate.
Ingredients

- 1 large bunch of asparagus
- 5–6 scallions
- 2 tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp black pepper (optional)
- 2 eggs
- 4 slices multigrain bread
- 6 small slices smoked salmon
- ½ lemon
- Chives for garnish
Instructions
- Wash the asparagus, trim and discard the tough ends, then cut into 2-inch pieces.
- Slice the scallions, using the white and light-green parts.
- Heat the olive oil in a large skillet over medium heat. Add the asparagus and scallions and cook for about 5 minutes.
- Add 2 tablespoons of water, cover the pan, and cook until the asparagus is tender.
- Add the eggs and stir to combine with the asparagus and scallions. Cook until the eggs are set, about 2 minutes.
- Serve on toasted multigrain bread drizzled with extra virgin olive oil. Add smoked salmon, season with salt and pepper to taste, and garnish with lemon and chives.
