Ingredients 

  • ½ Cup mayonnaise
  • ½ Cup sour cream
  • ½ Lime juiced
  • ½ teaspoon of salt
  • ½ teaspoon of ground black pepper
  • 1/2 teaspoon garlic powder
  • ½ teaspoon of chili powder
  • ½ teaspoon of ground cumin
  • 3 Cups of Fritos corn chips
  • 1 15-oz Can of sweet golden corn, drained
  • 1 15-oz Can of black beans, rinsed and drained
  • 1 Green pepper seeded and diced
  • 1 Red bell pepper seeded and diced
  • ½ Purple onion diced

Instructions 

  • Whisk together the mayonnaise, sour cream, lime juice, salt, pepper, garlic powder, chili powder, and cumin in a small bowl until smooth.
  • In a large bowl, combine the Fritos, drained corn, black beans, diced green and red peppers, and diced purple onion. Pour the dressing over the mixture and gently toss to coat every ingredient.
  • Serve immediately topped with freshly chopped cilantro and extra Fritos for garnish.
